Home made Beni-Shoga. Beni-shoga is a type of Japanese pickle. It is served with many Japanese dishes, including Gyudon, Okonomiyaki, Takoyaki and Yakisoba. It is made from thin strips of ginger pickled in Umezu, the pickling solution used to make umeboshi. Commercial Beni-Shoga often derives its hue from artificial coloring and very chemical. Because those are exported to Europe taking more than 3 month by ship. Therefore I make Beni-shoga by myself.
